Preparation time: 30 minutes


Tips: Small muffins work best.

Ingredients

Preparation

1 1/2  cups  plus 2 Tbs. flour

3/4  cup   sugar

2  teaspoons  baking powder

1/4  teaspoon  salt

1/4  teaspoon   ground nutmeg

1/2  cup   milk

1   whole  egg, beaten

1/3  cup  butter, melted

1. Preheat oven to 400 F degrees. Grease and flour small muffin tins.

2. Combine first five ingredients: flour, 3/4 cup sugar, baking powder, salt and nutmeg.

3. Add milk, egg and 1/3 cup butter. Mix thoroughly.

4. Fill 1/2 full and bake at 400 F degrees for 20 minutes.

5. Remove from pan immediately and dip in remaining 1/3 cup butter. Combine cinnamon, sugar and vanilla extract, then roll each muffin in mixture.

6. Serve warm.

NOTES : Makes 6 large muffins or 8 small.
