Tips: Serve with whipped cream or ice cream if desired.

Ingredients

1 1/4  cups  sugar

1/4  cup soft shortening

1 whole  egg

1/2  cup  milk

2 1/3  cups  sifted flour

2  teaspoons  baking powder

1/2  teaspoon  salt

2  cups  blueberries, fresh, canned or frozen

1/2  teaspoon  cinnamon

1/4  cup  soft butter

Pre heat oven to 350 F degrees.

 

1. Mix together thoroughly 3/4 cup sugar, shortening and egg. Stir milk.

2. Sift together 2 cups flour, baking powder and salt; stir into sugar mixture.

3. Defrost if frozen, rinse and drain blueberries. Carefully blend in blueberries.

4. Spread batter in greased and floured 10" spring pan or a 9 inch- square pan.

5. Sprinkle with topping made by mixing together remaining sugar, remaining flour, cinnamon and butter.

6. Bake in a 375 F degree oven for 25 to 35 minutes; serve warm.
