Ingredients

2  cups  sugar

1 1/4  cups vegetable oil

2  cups all-purpose flour

2  teaspoons baking powder

2  teaspoons  cinnamon

1  teaspoon  baking soda

1  teaspoon salt

4  whole eggs

3  cups grated carrots soaked in lemon juice (juice of 1 lemon)

1  cup chopped Macadamia nuts

3/4  cup    raisins

Preheat oven to 350 F degrees. Grease and flour a Bundt pan or tube pan.

 

1.  Mix the sugar and oil together in a large bowl.

2.  Sift the dry ingredients together.

3.  Alternate adding the dry ingredients and the eggs to the sugar mixture.

4.  Fold in the carrots, nuts and raisins.

5.  Pour into a greased and floured tube or bundt pan.

6.  Bake in a preheated 350 F degree oven for 50 to 55 minutes, or until a toothpick comes out clean when inserted into cake.

 

Cool and invert into platter.

 NOTES : 1) This cake is very grease thus it does not save well. You may want to try reduce oil by 1/4 to 1/2 cup.

 Make one Bundt cake.
