ONE:         

1  cup  sugar

1/2  cup  butter or margarine

1  egg          

     

    

1. Pre heat oven to 350 F degrees

2. Mix set ONE of ingredients until creamy.

3. Add set TWO of ingredients, add some milk if the dough is to thick. Dough should not be runny.

4. For bread loaf bake at 350 degrees in greased and floured bread loaf pan for approximately 1 hour or until a toothpick come out dry. Let cake cool for about 1 hr. Remove from mold  and wrap in aluminum foil. Cake will last good and moist for several days.

 

For muffins, use one 12 large muffin tin. Grease and flour tin, bake for about 35 minutes or until tops are puffed, set and golden brown.

 

VARIATION BAHAMAS STYLE: Add 1 EXTRA banana (total of 4),  2 Tablespoons maple flavored syrup and substitute  1/2 cup fine corn meal flour or corn bread mix for 1/2 cup of  all-purpose flour. Omit pecans.

NOTES : 1) Same recipe as "Apple Sauce Cake" using bananas instead of cooked apples, omit cloves.

2) Cake freezes well.
