Basic Sweet Dough

Ingredients

4 to 4 1/3  cups all-purpose flour

2 1/4  teaspoons active dry yeast  (1 envelope)

1  cup  milk

   1/3  cup sugar

   1/3  cup  butter or margarine

   1/2  teaspoon  salt

2 whole eggs

1. In a large mixing bowl combine 1 1/2 cups of the flour and the yeast; set aside.

2.  Using stove or microwave  heat and stir milk, sugar, margarine and salt, just till warm (120 degrees F) and margarine almost melts. Add to flour mixture. Then add eggs.

3. Beat with an electric mixer on low to medium speed for 30 seconds scraping sides of bowl. Beat on high speed for 3 minutes. Stir in as much of the remaining flour as you can. Knead in enough of the remaining flour to make a soft dough that is smooth and elastic. Use minimum amount of flour.

4. Shape into a ball. Place in a greased bowl; turn once to coat. Cover and let rise in a warm place till double (about 1 hr.)

5. Punch dough down. Turn out onto a lightly floured surface. Divide in half. Cover and let rest for 10 minutes.

6.  Shape and bake dough as directed in the selected recipe.

One recipe make about 12 rolls.

NOTES : For variety make 1/2 recipe Cinnamon Rolls and 1/2 recipe Caramel Rolls.
